Grapes are picked and put into crates in the first ten days of September.
Grapes are destemmed and pressed immediately, followed by static cleaning at low temperatures. Fermentation at a controlled temperature of 15°C - 16°C for 15 days.
Refinement in stainless steel vats.
Spumante Metodo Classico - Extra Brut with a bright straw yellow color, with a chain of very fine and persistent bubbles. The intensity and complexity of the aromas on the nose recall fragrant, floral and fruity notes. In the mouth it is dry, enveloping but with a marked acidity that makes this wine balanced, thanks to aging in the bottle for 40 months on the yeasts, with a careful "remuage" rigorously done by hand. A perfect wine for the most important moments and celebrations.
