Only the best grapes of important vintages are hand-picked, with strict selection depending on the ripening period. Then the grapes are separately dried in 5 - 6 kg crates in a controlled environment for 100 - 120 days.
The grapes are destemmed and pressed in the month of January. Cold maceration is followed by controlled fermentation for 15/20 days with frequent pumping over and moving of the pressed grapes (at a temperature from 18°C - 25°C, with a final temperature from 28°C)
Refinement takes place in French oak barrels with a capacity of 225 litres or 500 litres for about 24 months then in big oak barrels of 50 hl for other 48 months, followed by 12 months refinement in the bottle.
The wine is impenetrable ruby red. Intense, complex and surprisingly rich on the nose; ripe red berries, cherry, black cherry and plums are perceived; spicy notes of cinnamon, licorice and vanilla; medicinal herbs. Dry, warm and soft in the mouth with the presence of elegantly powerful tannins. Infinitely long finish.
