Grapes are hand-picked and strictly selected, depending on the ripening period.
Then the grapes are dried in 5/6 kg crates in a controlled environment for 60 -120 days.
The grapes are destemmed and pressed from the half of November till the half of December. Cold maceration is followed by controlled fermentation for 10/18 days with frequent pumping over and moving of the crushed grapes (at temperatures from 18°C - 25°C).
Refinement takes place in French and American oak barrels with a capacity of 225 lt, 500lt and big French oak barrels of 50 Hl for about 30 months, followed by 8/10 months refinement in the bottle.
The wine is clear and impenetrable of a vigorous ruby red. Ready and very fascinating aromas. Dried purple and pink, black cherry, plum, blueberry and currant. Balsamic sensations of Mediterranean scrub, then vanilla, hazelnut, dark chocolate with hints of tobacco and rhubarb. Full tasting, energetic; all the components are expressed at a high level to achieve an excellent together, smooth and great drink.A wine of refined structure.
