Grapes are hand-picked during the third decade of September and the first ten days of October and put into 5/6 kg crates. Grapes are then dried for 25/30 days.
The grapes are destemmed and pressed, then fermentation takes place at a controlled temperature with pumping over for 12/15 days
Refinement takes place in French oak barrels of 500 lt for about 24 months, followed by 8 months refinement in the bottle.
Limpid wine with a garnet red color, intense and complex. On the nose are perceived notes of ripe fruits such as cherry and blackberry. China, minerals and spices, such as vanilla and black pepper, chocolate and cinnamon. The mouthfeel is full and enveloping with soft tannins, balanced alcohol, crispness and flavor; the finish is balanced and of medium persistence with hints of licorice.
