Last days of September and first ten days in October, grapes are hand-picked and put into 5/6 kg crates.
Then the Corvina grapes are dried in a controlled environment for 40/50 days. Croatina and Casetta grapes are destemmed and pressed immediately.
Grapes are destemmed and pressed, controlled fermentation with delestage and pumping over for 12 - 15 days.
The wine rests in 225-500 lt French and American oak barrels of third passage for 24 months. Followed by refinement in the bottle for 8 months.
Clear wine with a very dense ruby red color. Broad and intense, with toasted notes of coffee and cocoa, spicy, such as black pepper; still fresh aromatic herbs, such as mint and oregano and fruit, such as cherries, black cherries and blackberries. It is elegantly fresh and tannic with a good structure, with a long and persistent sip.
