Starting from the 2023 harvest, indeed, the Company has acquired the “Organic” certification, continuing a path undertaken some time ago to protect the valleys that extend between Mezzane, Illasi and Valpantena.

Organic Soave-biologico

Production area: Mezzane di Sotto and Valle d’Illasi
Clayey-calcareous soils
Altitude of vineyards:  Over 200 meters above sea level
Grape blends: Garganega 90%, Trebbiano di Soave 10%
Age of vineyards:  35 years
Plant training system:  Pergola 4,500 vine stocks/ha and Guyot 12,000 vine stocks/ha
Yield per hectare:  60 hl/ha
Alc./Vol:  11,5 – 12,5%
Serving temperature:  10°C – 12°C.

Grapes are picked in bins with a capacity of 3 quintals.
Grapes are destemmed and pressed immediately, followed by static cleaning at low temperatures. Controlled fermentation takes place at 15°C /16°C for 15 days
Refinement takes place in stainless steel vats.
Young, crystalline, limpid wine with straw-yellow tones. Very fresh on the nose, flowers and white pulp fruit with hints of menthol and aromatic herbs. Palate with good elegance, which has a clean progression with hints of bitter almond in the finish.
